Homemade Vanilla Pudding
Homemade Vanilla Pudding
This delicious, custard-y pudding only takes 10 minutes to make!  Practically an instant...but without any chemicals!


Ingredients:

1/3 cup sugar
2 Tablespoons cornstarch
1/8 teaspoons salt
2 cups milk
2 egg yolks, slightly beaten
2 Tablespoons butter
2 teaspoons vanilla

Directions:

1.  Mix sugar, cornstarch and salt in a 2 quart saucepan.  Gradually stir in milk.  Cook over medium heat, stirring constantly, until mixture thickens and boils.  Boil and stir 1 minute.

2.  Gradually stir half of the hot mixture into egg yolks; stir back into hot mixture in saucepan.  Boil and stir 1 minute; remove from heat.  Stir in margarine and vanilla.

3.  Pour pudding into 1/2 cup-capacity dessert dishes.  Cover and refrigerate until firm and chilled.

Top with homemade whipped cream!
