|Sausage Tortellini Soup|
This soup is delicious and hearty. It warms your bones on a cool evening!
Serve with crusty rolls or bread.
Ready in less than 30 minutes!
1 pound mild or sweet Italian sausage (casings removed)
1 cup onions, chopped (about 1 large onion)
2 carrots, diced
2 celery ribs, diced
2 garlic cloves, chopped
2 zucchini, cut into ½ -inch chunks
4 cups chicken broth or stock
1 can diced tomatoes (14.5 oz), undrained
2 cups frozen cheese tortellini
1. Break up sausage and brown over medium-high heat in a large pot or Dutch oven.
2. Add onion, carrot, celery, and garlic; cook until soft, about 8 minutes, stirring often.
3. Add broth, tomatoes and zucchini; bring to a boil. Cover, reduce heat to low and simmer for 10 minutes.
4. Bring back to a boil; add tortellini. Cook uncovered for 3 minutes, being careful not to overcook or the tortellini will open up.
Serve with Parmesan cheese if desired.
