You can use this as a spread on sandwiches, as a sauce on pasta, or (my favorite) as a topping on sliced tomatoes!
Ingredients:
2 cups packed fresh basil leaves
¾ cup grated Parmesan cheese
¾ cup olive oil
3 cloves garlic
¼ cup pine nuts
Directions:
1. Place all ingredients in a blender or food processor. Pulse until ingredients become blended, then puree until smooth.
Store any unused sauce in the refrigerator.
Makes 1 1/3 cups pesto

DeleteI absolutely adore pesto. I think one of the things I've missed most living in a condo these last 2 years is that I can't grow herbs, and that means no homemade pesto (it's just too expensive to buy the fresh leaves at the store). Luckily I'm moving as soon as I can get this condo sold and have plans to plant bushels of basil next year.
