1/3 cup coconut oil
1 cup unbleached flour
¼ teaspoon salt
2 to 6 Tablespoons ice cold water


1.  Cut coconut oil into flour with a fork or pastry blender until the size of coarse crumbs.  Sprinkle with cold water, 1 tablespoon at a time, mixing with a fork until all the flour is moistened and pastry almost cleans the side of the bowl.

2.  Gather pastry into a ball.  Place on a floured surface.  Using a floured rolling pin, roll into a circle 2 inches larger than the pie plate you will be using.  Gently roll pastry around the rolling pin to pick up; unroll into the pie plate.

Makes 1 pie crust
