Benihana Chicken Fried Rice

Benihana used to offer their recipes on their website.  We all loved their chicken fried rice, so I tried to re-create it at home.

Over the years I have made some adjustments to make it more of a main meal than a side dish.  Now we all like this version better than the original!

Benihana Chicken Fried Rice

Ingredients

1 ½ cups long-grain white rice
3 cups water
2 Tablespoons oil (canola or vegetable), divided
1 lb. boneless skinless chicken breast
2 eggs
½ cup onion, finely chopped
½ cup carrot, finely chopped
1 garlic clove, minced
2 Tablespoons soy sauce
2 Tablespoons butter

Directions

1.  Bring water and rice to a boil in a medium pot.  Reduce heat to low, cover and cook for 15 minutes.  Remove from heat and allow to stand, covered, for 5 minutes.

2.  Meanwhile, in a large pan heat 1 tablespoon of the oil over medium heat.  Cook chicken for 4 minutes on each side or until cooked through.  Remove from pan and cut into 1/2-inch cubes.

3.  Scramble the eggs into small pieces; remove from pan, set aside with the chicken.

4.  Add remaining tablespoon of oil to the pan.  Cook onions, carrots and garlic over medium heat until onion is soft and translucent.

5.  Add cooked rice, chicken and egg to the onion mixture.  Add the soy sauce and the butter; stir until the butter is melted and the soy is thoroughly combined.

Makes 4 2-cup servings
