Homemade Yellow Cake

You can use this classic cake recipe to make one 13 x 9-inch cake, one 8 or 9-inch layer cake, or 24 cupcakes.


Homemade Yellow Cake

Ingredients

2 ¼ cups all-purpose flour
1 ½ cups sugar
½ cup coconut oil
1 ¼ cups milk
3 ½ teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
3 eggs

Directions

1.  Heat oven to 350°.  Grease bottom and sides of pan(s) and lightly flour, or line cupcake pans with paper liners.

2.  Beat all ingredients with a mixer on low speed for 30 seconds.  Increase to high speed and beat for 3 minutes, scraping the sides of the bowl occasionally with a rubber spatula. Pour into prepared pan(s).

3.  Bake until toothpick inserted in the center comes out clean:

13 x 9-inch: 40-45 minutes

8 or 9-inch rounds: 30 to 35 minutes

Cupcakes: 12 to 15 minutes

Cool completely before frosting.
