Southwest Grilled & Ready Chicken Breast Strips

These are so handy to have around; they make a really quick meal!  You can use them for nachos, tacos, fajitas…there are so many options!

This recipe is the equivalent of 2 packages (they are usually 6-8 oz. each) of store-bought cooked chicken breast strips.

You can broil these if grilling not an option for you also.

Southwest Grilled & Ready Chicken Breast Strips

Ingredients

2 lbs. boneless skinless chicken breasts
¼ cup lime juice
2 Tablespoons oil (such as vegetable or canola)
2 teaspoons soy sauce
1 teaspoon salt
1 teaspoon garlic powder
½ teaspoon liquid smoke
½ teaspoon cayenne pepper
¼ teaspoon black pepper

Directions

1.  Slice or pound chicken breast to a thickness no larger than ½ inch.  This will ensure even quick cooking.

2.  Combine remaining ingredients in a large bowl.  Add chicken; cover and refrigerate for 1 hour (or overnight).

3.  Grill over medium-high for 5 minutes on each side (or broil 4-6 inches from heat for 5 minutes on each side).  Allow to fully cool.  Cut into ¼ inch strips.

4.  Divide strips evenly among 2 freezer bags.  Refrigerate for up to 3 days or freeze for up to 6 months.
