You gotta love muffins…it’s like quickbread and a cupcake had a baby!
Apple Cinnamon Streusel Muffins
Ingredients
Streusel Topping (below)
1 cup milk
¼ cup cooking oil (such as vegetable or canola)
½ teaspoon vanilla
1 egg
1 cup grated apple
2 cups flour
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon cinnamon
½ teaspoon salt
Directions
1. Heat oven to 400°. Line a muffin tin with 12 paper liners.
2. Prepare streusel topping; set aside.
3. Beat milk, oil, vanilla, and egg in a large bowl. Add remaining ingredients and stir until flour is moistened (batter will be lumpy). Divide batter evenly among muffin cups. Sprinkle each with about 2 teaspoons of streusel topping.
4. Bake 20 to 25 minutes or until golden brown. Immediately remove from pan to wire rack to cool.
Makes 12 muffins
Streusel Topping
2 Tablespoons butter
¼ cup flour
2 Tablespoons packed brown sugar
¼ teaspoon cinnamon
Cut butter into flour, brown sugar and cinnamon in a small bowl with a fork until crumbly (see picture below)
