Apple Cinnamon Streusel Muffins

They’re soft, moist, packed with fresh grated apple, and finished with a buttery cinnamon-brown sugar streusel. Think of them as the perfect blend of quick bread and a cupcake—easy to make, deliciously comforting, and ideal for busy mornings or weekend baking.

Apple Cinnamon Streusel Muffins Recipe

Ingredients

Streusel Topping (below)
1 cup milk
¼ cup cooking oil (vegetable or canola)
½ teaspoon vanilla
1 egg
1 cup grated apple
2 cups flour
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon cinnamon
½ teaspoon salt


Directions

  1. Preheat oven to 400°F and line a muffin tin with 12 paper liners.

  2. Make the streusel topping and set aside.

  3. In a large bowl, whisk together the milk, oil, vanilla, and egg. Add the remaining dry ingredients and stir just until the flour is moistened (the batter will be lumpy).

  4. Divide the batter evenly among muffin cups. Sprinkle each muffin with about 2 teaspoons of streusel.

  5. Bake for 20–25 minutes, or until golden brown. Remove immediately from the pan and cool on a wire rack.

Makes 12 muffins


Streusel Topping

2 Tablespoons butter
¼ cup flour
2 Tablespoons packed brown sugar
¼ teaspoon cinnamon

Cut the butter into the flour, brown sugar, and cinnamon with a fork until the mixture is crumbly.
