Apple Bread

Easy and delicious quick bread made with apples and spices!

Ingredients:

 1 ½ cups flour
1 teaspoon ground cinnamon
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon baking powder
¼ teaspoon ground nutmeg
1 egg, beaten
1 cup sugar
¼ cup cooking oil (such as canola or vegetable)
1 ½ cups peeled, grated apple

Directions:

1.  Preheat oven to 350°.  Grease an 8x4 inch loaf pan.

2.  In a medium bowl, combine the flour, cinnamon, baking soda, salt, baking powder, and nutmeg.

3.  In another medium bowl combine egg, sugar, apple and oil.  Add mixture to flour mixture; stir to combine.

4.  Spoon batter in to prepared pan.  Bake for 50-55 minutes or until a wooden pick inserted near center comes out clean.

5.  Cool in pan for 10 minutes; remove from pan.  Cool completely on a wire rack.  Wrap in plastic wrap overnight before slicing.


Makes 1 loaf/ 16 slices

  1. Hi Trisha! Delightful to rest a while in your kitchen! Love your back to basics approach to from scratch cooking. My mom was raised doing everything from scratch and I have yet to find any processed food that can match down home cooking with real ingredients. This apple bread looks like it's right up my alley! I am gf - so I might give it a shot with a gf flour. Love breads and cakes, so it's hard in mid-life to have to make those diet changes - but the healthier choice for me.
