Easy Risotto (No-Stir Method!)

If you love classic Italian comfort food but don’t love standing over the stove stirring constantly, this easy risotto recipe is for you. Traditional risotto requires gradually adding liquid to Arborio rice while stirring to release starch and create that signature creamy texture.

This simplified, no-stir risotto method still delivers the rich, velvety consistency you expect—all with minimal effort. Arborio rice is usually found in the Italian section of most grocery stores, making this dish quick, convenient, and perfect for weeknights.


Easy Risotto Recipe

Ingredients

  • 2 Tablespoons butter, divided

  • 1/3 cup chopped onion

  • 2/3 cup uncooked Arborio rice

  • 1 cup chicken broth or stock

  • 1 cup water

  • 1/4 cup grated Parmesan cheese


Directions

  1. Sauté the aromatics:
    Melt 1 tablespoon of butter in a medium saucepan over medium heat. Add the chopped onion and cook until soft and translucent. Stir in the Arborio rice and cook for 2 minutes to lightly toast the grains.

  2. Cook the risotto:
    Add the chicken broth and water. Bring the mixture to a boil, then cover the saucepan. Reduce heat to low and cook for 20 minutes without lifting the lid.

  3. Finish and serve:
    Remove the saucepan from the heat. Stir in the remaining tablespoon of butter and the Parmesan cheese. The risotto should be creamy—add hot water, 1/4 cup at a time, if needed to reach your desired texture.

Makes 4 (2/3-cup) servings.
