Ingredients

  • 28 oz. can tomatoes (about 3 ½ cups)

  • ¼ cup onion (about ½ of a small onion)

  • 3 Tablespoons butter

  • 3 Tablespoons flour

  • 1 ½ cups milk

  • 1 teaspoon salt

  • ½ teaspoon sugar

  • ½ recipe Homemade Cooked & Ready Chicken Breast Strips (1 bag) 

  • 2 cups frozen cheese tortellini

Instructions

  1. Blend the base: Puree the tomatoes and onion in a blender until smooth.

  2. Make the soup: In a large pot, melt the butter over medium heat. Whisk in the flour until smooth, then stir in the tomato-onion mixture. Add the milk, salt, and sugar. Bring to a boil, then reduce heat and simmer for 10 minutes.

  3. Finish and serve: Stir in the cooked chicken and frozen tortellini. Simmer for 10 more minutes, or until the tortellini is tender and everything is heated through. Season with salt and pepper to taste.
