There are sooo many recipes and variations for chicken and dumplings...some are light and fluffy dumplings with a clear broth, some are like dense noodles, some have a creamy broth.

I have tried them all and THIS one is hands down my favorite!  The dumplings are a cross between fluffy and dense, the broth is creamy and delicious!  I could eat the whole pot myself!

It's also super quick; the whole thing is ready in under 30 minutes!

Ingredients:

6 cups chicken broth or stock
2 cups cooked chicken, cubed
1 cup chopped carrots
4 Tablespoons butter
1 clove garlic, finely chopped
1/4 teaspoon black pepper
2 cups Homemade Bisquick
1/2 to 2/3 cup ice water

Directions:

1.  In a 3-quart pot, combine the chicken broth, chicken, carrots, butter, garlic and black pepper.  Bring to a boil.  Lower heat, simmer 1 minute.

2.  In a mixing bowl, add ice water to Homemade Bisquick one tablespoon at a time until a light dough is formed.

3.  Bring chicken mixture back to a boil; lower heat.  Drop the dumpling dough by rounded tablespoonfuls into the gently bubbling broth, spacing them as evenly as possible.

4.  Cover and simmer for 15 minutes without lifting the cover.

5.  Gently stir, allow to stand for 5 minutes before serving.

Serves 4
