Homemade Frozen Chicken Nuggets

Frozen chicken nuggets are great to have on hand; they’re easy and kids love them.

But let’s face it, the store bought versions are closer to “mystery meat” than they are to chicken!

Making a homemade version ahead of time allows you the convenience of store-bought, but with real, good ingredients!

Homemade Frozen Chicken Nuggets

Ingredients

3 lbs. boneless, skinless chicken breasts, cut into ½-inch strips
2 cups Homemade Bisquick
1 ½ cups grated Parmesan cheese
1 ½ teaspoons salt
1 ½ teaspoons paprika
3 eggs, beaten
½ cup butter (1 stick), melted

Directions

1.  Heat oven to 450°.  Line a baking sheet with foil; spray with cooking spray.  Combine Homemade Bisquick, parmesan cheese, salt and paprika in a large bowl or a 1-gallon Ziploc bag.

2.  Dip chicken pieces into egg, then coat in Homemade Bisquick mixture.  Place chicken pieces on prepared baking sheet.  Drizzle butter over chicken.

3.  Bake for 10 minutes.  Allow to cool completely on baking sheet.

4.. Place chicken pieces on a new baking sheet.  Place in the freezer for 2 hours.  Remove from freezer; divide chicken evenly among 3 Ziploc freezer bags.  Freeze for up to 6 months.

To make frozen nuggets:

1.  Heat oven to 450°.   Place nuggets on a baking sheet.  Bake 12-14 minutes, turning halfway through bake time.




Makes 12 servings
