For the ultimate taco-inspired flavor, serve this soup with crushed tortilla chips and a sprinkle of shredded Monterey Jack or cheddar cheese on top.

Ingredients:

  • 1 pound ground beef

  • 1 onion, chopped

  • 6 tablespoons taco seasoning mix (or 2 packets)

  • 1 (16 oz.) can pinto beans, drained

  • 1 (16 oz.) can kidney beans, drained

  • 1 (16 oz.) can corn, drained

  • 1 (28 oz.) can diced or crushed tomatoes

  • 1 teaspoon salt

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

Directions:

  1. In a large pot or Dutch oven, cook the ground beef and onion over medium heat until browned. Drain excess fat.

  2. Stir in taco seasoning, beans, corn, tomatoes, and seasonings. Mix well.

  3. Bring to a simmer, then reduce heat to low. Let the soup simmer gently for 30 minutes to allow flavors to blend.

Serving Tips:

  • Top with shredded cheddar or Monterey Jack cheese.

  • Add crushed tortilla chips for crunch.

  • Garnish with sour cream, diced avocado, or fresh cilantro for even more flavor.

This one-pot taco soup serves 4–6 people and makes great leftovers. It’s cozy, filling, and perfect for game nights, potlucks, or an easy family dinner.
