Easy White Bean Chicken Chili Recipe – Creamy & Flavorful

This white bean chicken chili is one of my all-time favorite comfort food recipes! I love this recipe!  I could eat the whole pot by myself! Made with tender chicken, creamy white beans, and warm spices, it’s a hearty one-pot meal that’s ready in about 30 minutes.

I love using a rotisserie chicken for this recipe—it saves time and adds extra flavor. Just half of one rotisserie chicken gives you the 2 cups of cooked chicken you need. Top each bowl with shredded cheddar cheese, crushed tortilla chips, or even a dollop of sour cream for the ultimate cozy dinner. Um-Um good!


Ingredients for White Chicken Chili

  • 2 Tablespoons butter

  • ½ cup chopped onion (about 1 small onion)

  • 1 garlic clove, minced

  • 2 cups cooked chicken, cubed (rotisserie chicken works great)

  • 1 can (15–16 oz.) great northern or cannellini beans, undrained

  • 2 cups chicken broth or stock

  • ½ Tablespoon chili powder

  • 2 teaspoons ground cumin

  • ½ teaspoon salt

  • 2 Tablespoons cornstarch

  • ¼ cup water


How to Make White Bean Chicken Chili

  1. Sauté aromatics – In a large pot or Dutch oven, melt the butter over medium heat. Add the onion and garlic, cooking until soft and fragrant.

  2. Add main ingredients – Stir in the cooked chicken, beans (with liquid), chicken broth, chili powder, cumin, and salt. Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes, stirring occasionally.

  3. Thicken the chili – In a small bowl, whisk cornstarch with water until smooth. Stir into the chili, bring back to a gentle boil, and cook until slightly thickened.

  4. Serve – Remove from heat and let stand for 5 minutes before serving. Garnish with cheese, tortilla chips, or fresh cilantro if desired.

  • Make it creamy: Stir in ½ cup sour cream or cream cheese at the end for a creamier chili.
