Cheesy Gnocchi Casserole with Chicken and Peppers
This easy Gnocchi Casserole is the ultimate comfort food—creamy, cheesy, and full of flavor! The first time I tried it was at a little restaurant my husband and I discovered on a road trip. Every review raved about their baked gnocchi, and once we tried it, we were hooked!
Their version was simple—just gnocchi, sauce, and cheese—but I wanted to make it a heartier meal at home. So I added juicy chicken and crisp green peppers for extra flavor and texture. The result? A rich, oven-baked gnocchi casserole that’s pure comfort in every bite.
Perfect for busy weeknights or cozy weekends, this cheesy pasta bake comes together quickly and tastes like an Italian restaurant favorite.
Ingredients

1 package (about 1 lb.) potato gnocchi

1 Tablespoon cooking oil (olive, vegetable, or canola)

½ cup sliced green pepper

½ cup sliced onion
-
½ recipe Cooked & Ready Chicken Breast Strips (about 1 bag)

3 cups Easiest & Best Spaghetti Sauce (½ recipe)

2 cups shredded mozzarella cheese
Instructions

Preheat oven to 400°F (200°C). Cook gnocchi according to package directions, drain, and set aside.

Sauté vegetables: In a small skillet, heat oil over medium-high heat. Add onions and green pepper and cook until onions are soft and translucent.

Combine ingredients: In a 2-quart casserole dish, mix gnocchi, spaghetti sauce, chicken, onions, and peppers. Stir until evenly coated.

Top and bake: Sprinkle mozzarella cheese on top. Bake for 20 minutes or until hot, bubbly, and lightly golden on top.
Makes 4 servings.

For a vegetarian version, skip the chicken and add more veggies!
