Creamy Chicken & Gnocchi Dinner
Oh, gnocchi—how I love you! These soft, pillowy dumplings make every meal a little more special.
This Creamy Chicken and Gnocchi Dinner is comfort food at its best: tender chicken, sautéed veggies, and gnocchi all coated in a rich, creamy sauce. It started as a Rachael Ray recipe, but after a few tweaks over the past several years, it has become a true family favorite in our house!
Perfect for busy weeknights or cozy weekends, this easy skillet dinner comes together in under 30 minutes and tastes like something from your favorite Italian restaurant.
Creamy Chicken & Gnocchi Recipe
Ingredients

1 package potato gnocchi (about 12 oz.)

2 Tablespoons butter

1 lb. boneless, skinless chicken breast, cut into thin strips

½ cup chopped onion
-
1 red bell pepper, cut into strips
-
1 zucchini, cut lengthwise and then into ½-inch pieces
-
1 cup milk
-
2 Tablespoons flour
-
Salt and pepper, to taste
Directions

Cook the Gnocchi:
Prepare gnocchi according to package directions. Drain and set aside. -
Cook the Chicken and Vegetables:
In a large skillet, melt butter over medium-high heat. Add chicken and cook for about 4 minutes. Add onion, red pepper, and zucchini. Continue to cook for 4–5 minutes, stirring often, until the chicken is cooked through and the vegetables are tender. -
Make the Creamy Sauce:
In a small bowl, whisk flour into the milk. Pour into the skillet and stir well. Bring to a boil, then reduce heat and simmer until the sauce thickens. -
Combine and Serve:
Add the cooked gnocchi to the skillet and stir to coat evenly in the sauce. Season with salt and pepper to taste.
Serves: 4

I love that this recipe begins with pre-made gnocchi because I have never made it and, though I enjoy it, am not likely to. Dough and I just do not mix, no matter what type of dough it is. This looks yummy. Thanks for the recipe.
