Monterey Chicken

This is an easy dinner based on the Chicken Monterey served at Chili’s restaurant.

BBQ sauce, bacon, and cheese…how can you go wrong?

Ready in under 30 minutes!

Ingredients:

2 Tablespoons cooking oil (canola or vegetable)
4 boneless, skinless chicken breasts
½ cup prepared barbeque sauce
4 strips bacon, cooked
2 cups shredded cheddar Monterey jack cheese

Directions:

1.  Heat oil on a large skillet over medium heat.  Add chicken and cook, turning once, until the thickest part of the chicken is no longer pink, about 10-15 minutes.

2.  Reduce heat to low.  Pour barbeque sauce evenly over chicken breasts, turning to coat both sides.  Top each chicken breast with a piece of bacon.  Sprinkle evenly with cheese; cover until cheese is melted.

Serve with Garlic Mashed Potatoes, if desired

Makes 4 servings

  4. This sounds really good. I probably will skip the bacon...I know it would taste best that way, but I just don't normally keep it in the house. Thanks for an easy way to make a quick chicken dinner.
