White Bean Chicken Chili
White Bean Chicken Chili

I love this recipe!  I could eat the whole pot by myself!

Topped with some cheddar cheese and crushed tortilla chips...um-um-good!

I use a rotisserie chicken for this one; 1/2 a rotisseries chicken will get you the 2 cups of cooked chicken you need.

Ingredients:

2 Tablespoons butter
½ cup chopped onion (about 1 small onion)
1 clove garlic, minced
2 cups cooked chicken, cubed
1 can (15-16 oz.) great northern or cannellini beans, undrained
2 cups chicken broth or stock
½ Tablespoon chili powder
2 teaspoons ground cumin
½ teaspoon salt
2 Tablespoons cornstarch
¼ cup water

Directions:

1.  Melt butter in a large pot or Dutch oven over medium heat.  Add onion and garlic; cook until onion is soft and translucent.

2.  Add remaining ingredients except cornstarch and water.  Heat to boiling; reduce heat to low.  Cover and simmer 30 minutes, stirring occasionally.

3.  Stir cornstarch into water; add to chili mixture.  Bring to a boil, stirring constantly.  Remove from heat; allow to stand 5 minutes before serving.

Serve with tortilla chips and shredded cheese, if desired.

    1. Cooler weather is here my friend! It takes all my strength not to turn on the heat some days! You'll have to give me your slow-cooker version so I can try it out!

  3. Made this chili this evening. Hubby gave it a 5 out of 5! Simple and delicious. I added green pepper when sauteeing and chopped cilantro for an additional topping. Thank you for the recipe!
