I first found this casserole when my husband and I were driving home and wanted to find somewhere new to stop for dinner.  I hit up Yelp, and all the reviews mentioned this place that had awesome Gnocchi Casserole.  Sold!  It was to die for!

The restaurant's version just had the gnocchi baked with sauce and cheese.  I added chicken and green pepper to make it more of a meal and voila! Delicious, cheesy, oven-baked goodness!

Gnocchi Casserole


Ingredients

1 package potato gnocchi (about 1 lb.)
1 Tablespoon cooking oil (olive, vegetable, or canola)
½ cup sliced green pepper
½ cup sliced onion
½ recipe Cooked & Ready Chicken Breast Strips (1 bag)
3 cups Easiest & Best Spaghetti Sauce (1/2 recipe)
2 cups shredded mozzarella cheese

Directions

1.  Heat oven to 400°.  Cook gnocchi according to package directions; drain and set aside.

2. Meanwhile, heat oil in a small skillet over medium-high heat.  Cook onions and green pepper until onion is soft and translucent.

3.  In a 2-quart casserole, combine gnocchi, sauce, chicken, onions and peppers.  Top with cheese.

4.  Bake for 20 minutes or until hot and bubbly and cheese is slightly browned.

Makes 4 servings
