|Chocolate Chip Pie|
This is seriously my favorite pie.
There is a place by me called Achatz Handmade Pie Company, and they have the best pies. One time I was in there and they had this pie and I knew I had to come home and make it! It’s been a regular around here ever since!
1 unbaked pie crust (check out my pie crust recipe here)
2 large eggs
1/2 cup flour
1/2 cup sugar
1/2 cup packed brown sugar
3/4 cup (1 1/2 sticks) butter, softened
1 cup mini chocolate chips
1. Preheat oven to 325°. Fold excess pastry under and flute the edges of the pie crust.
2. Beat eggs in large mixer bowl on high speed until foamy. Beat in flour, sugar and brown sugar. Beat in butter. Spoon into pie shell.
3. Sprinkle chocolate chips over the top of filling. Bake for 55 to 60 minutes or until knife inserted halfway between edge and center comes out clean. Cool on wire rack.
Serve with ice cream, if desired.
Makes 1 pie, 8-10 servings
