Fried Chicken with Country Gravy

This recipe is comfort food at its finest!  Serve with mashed potatoes and a vegetable for a perfect Sunday dinner.

Ingredients

1 pound boneless, skinless chicken breast, pounded or sliced ½ inch thin
1/3 cup flour
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Cooking oil (vegetable or canola)
2 Tablespoons flour
1/4 teaspoon salt
1 ½ cups milk

Directions:

1.  Combine 1/3 cup flour, ½ teaspoon salt and ¼ teaspoon pepper in a bowl or pie plate.  Coat chicken with flour mixture.

2.  Heat ¼-inch of oil in a large skillet or frying pan over medium heat.  Add chicken, cook 15 minutes, turning halfway through, until golden brown and thickest part of chicken is cooked.

3.  Pour off all but 2 Tablespoons of pan drippings, keeping crusty bits in the pan.  Stir in 2 Tablespoons flour and ¼ teaspoon salt.  Gradually add milk; cook over low heat stirring constantly or until mixture comes to a boil.  Add pepper to taste. 

Serve gravy over chicken and on mashed potatoes, if desired.
