This soup is like the one served at Olive Garden (although we all think this version is even better!)

I have to warn you of a few things first:

One, everyone will bug you to make this over and over.

Two, it is very filling, but so delicious so you will want to keep eating!  This soup will definitely get you full!

I used a rotisserie chicken.  One rotisserie chicken will give you 4 cups of diced cooked chicken; you can save the other 2 cups for another meal.

Ingredients:

2 cups diced, cooked chicken
2 Tablespoons butter
2 Tablespoons flour
½ cup onion, finely diced
¼ cup celery, finely chopped
2 cloves garlic, minced
2 cups milk
2 cups chicken broth or stock
½ cup carrots, shredded
½ teaspoon garlic powder
1 cup fresh spinach, chopped (or you can use ½ cup frozen)
8 oz. potato gnocchi (usually ½ of a package)

Directions:

1.  Melt butter over medium heat in a large pot.  Add onion, celery and garlic; cook until onion is soft and translucent, stirring occasionally.

2.  Add the flour; cook and stir for 1 minute.  Gradually add the milk, cooking and stirring until smooth and thickened.

3.  Add the remaining ingredients; simmer for 10 minutes.  Salt & pepper to taste.

Serves 4

  1. delish I make with chicken and also did a vegetarian version, for veg i used 2 cups almond milk, 2 cups water blended with 1/4 cup raw cashews in my vita mix , 2 cubes of not chicken broth. fast and yummy
